Food Heroes is a European wide Interreg project that aims to support businesses (and industry sectors) address the issue of food waste in innovative ways. Some of the things that are being looked at are using by-products (e.g. fish sausages, mushroom stalk burgers), creating markets (e.g. male billy goat meat – lots get destroyed as only the females are needed for milk) and reducing waste at source (e.g. improved vegetable grading).
